                             Venison and Asparagus Stir-Fry

I consider myself a pretty lucky guy–I enjoy my job, I get to hunt and I love my wife. When I met my wife, Anne, I knew there were a lot of things about her that were terrific. She was smart, funny, beautiful and the list goes on. However, I didn’t know anything about her cooking skills. That is where I was really lucky.

It turns out, Anne is an excellent cook. And she loves it. So, when I started this site, I envisioned helping people to achieve better success in the field. But as we all know, the hunt doesn’t end there. That is where my wife is going to help out. Throughout the year, I will post her wild game recipes and I hope you try some because they are excellent. Below is the first submission of Anne’s recipes and many others will follow. Remember, eating the animal is the ultimate reward. Hope you enjoy.

How-to…

  • 12 – 16 oz. venison, sliced thinly (we used leg steak of Kansas whitetail, but any good quality venison would work)
  • ½ cup yellow onion, diced
  • 1 bunch of skinny asparagus, cut into bite-sized pieces
  • 1 large carrot, shredded
  • 3 green onions, chopped
  • 2 Tbsp soy sauce or alternative (we used Bragg Liquid Aminos)
  • 2 Tbsp fresh ginger, grated (dried is fine, but use less)
  • 3 cloves garlic
  • Juice of ½ lemon

 My entire life, I have been fascinated with African animals. The exotic looks, the variety of species, the shear numbers. One day I will make the 20-hour flight to see them, but until then I’ll just have to dream. And attend the Fresno Field Archers’ Safari shoot every April.

The 60-target course is complete with lions, zebras and a life-size elephant. And this past weekend, we shot them all. For the first time, I shot in a money shoot. It was a blind draw with one amateur (who had a handicap) and one freestyle shooter (without a handicap). My partner and I did horribly as a team and were not a factor on the second day of shooting.

Even though our team score was very bad, my individual score was pretty good. I posted a new personal high score with a 1284 (out of 1320) in the Bowhunter Freestyle class. It put me in fourth place behind some top-notch pin shooters (Shawn Wood, Tom Wagner and Aaron Davis). For the forth week in a row, I have shot a little better than the previous week. And with Redding only a couple days away, I’m excited to get on the course. Read the rest of this entry »
